Roasted Quail

  • ¼ cup of salt

  • ½ quart of water 

  • ½ quart of wine 


  • 2 bay leaves 

❥ Four Quail

  • olive oil 

  • 2 sticks of celery 

  • salt & pepper

After I finished cooking the quail I used the meat juices to saute frozen green beans. I also used the leftover bones and necks to make bone broth to keep in my freezer.
