Flourless walnut & date cake

Ingredients

6 egg whites

salt

Cinnamon

¾ cup / 150 g powder sugar

1 ¾ cup 200g walnuts, roughly chopped

1 ⅓ cup 200g dates, finely chopped

More chopped walnuts and pistachios for garish



Recipe 

Preheat the oven to 180°C/160°C. Oil and flour cake tin.
Beat the egg whites to stiff peaks. Add the salt and cinnamon, and powdered sugar
Gently fold in the walnuts and dates.
Sprinkle with more chopped walnuts and bake for 35-40 minutes.
Cool for 30 minutes, before removing the cake
Garnish with more powdered sugar and chopped pistachios
