Roasted Cauliflower with hummus

Ingredients

❥ Cauliflower Steaks  

1 thickly sliced cauliflower 

olive oil 

chopped rosemary  

chopped sage 

salt 

pepper

pine nuts   

  feta cheese

parsley  

❥ Hummus  

two cups cooked chickpeas  

¼  cup olive oil  

½ cup tahini  

1 or 2 cloves of garlic 

1 lemon juice 

1 tbsp paprika

Salt and pepper 


Recipe 

1. Preheat the oven to 356℉/180℃

2. Slice cauliflower into thick steak like slices. Place on a baking sheet: sprinkle with chopped rosemary, chopped sage, olive oil, salt and pepper. Bake for 40 minutes.

3. In a food processor blend chickpeas, olive oil, tahini, a clove of garlic, lemon juice, paprika, salt, and pepper until smooth. You can add water to thin out the consistency if needed.

4. 10 minutes before the cauliflower is done add pine nuts to the oven toast.

5. On a plate make a bed of hummus and place the cauliflower steaks, garnish with toasted pine nuts, crumbled feta cheese, and chopped parsley.
